Όλος αυτός ο πρόλογος και όλα αυτά τα κατορθώματα θα μπορούσαν κάλλιστα να απουσιάζουν και να αντικατασταθούν απλά με την φράση «Ένα σύντομο βιογραφικό του κυρίου John Baldwin!» …Χμμμ…ναι… Μάλλον θα πρέπει να τον αναφέρω με το καλλιτεχνικό του…

Κυρίες και κύριοι πάμε να σκιαγραφήσουμε όσο πιο ταπεινά και περιεκτικά γίνεται την χαοτική μουσική διαδρομή που χάραξε ένα από τα μεγαλύτερα φαινόμενα στην ιστορία της σύγχρονης μουσικής - γενικότερα! Το φαινόμενο αυτό ακούει καλλιτεχνικά στο όνομα John Paul Jones.

 

 

Γεννήθηκε στις 3 Ιανουαρίου του 1946 στο Sidcup του Kent της Νότιας Αγγλίας και μεγάλωσε σε ένα περιβάλλον όπου η μουσική ήταν είδος πρώτης ανάγκης καθώς ο πατέρας του ήταν επαγγελματίας μουσικός… Στην ηλικία μόλις των έξι ετών ξεκίνησε να παίζει πιάνο έχοντας ως δάσκαλο τον πατέρα του και ταυτόχρονα συμμετείχε ενεργά ως κανονικό μέλος στην χορευτική μπάντα που είχαν οι γονείς του. Σε αυτήν την τρυφερή ηλικία επίσης λάτρεψε τα αρχέγονα blues την jazz αλλα και την κλασσική μουσική. Ήταν μόλις 14 χρονών όταν αγόρασε το πρώτο του ηλεκτρικό μπάσο και στην συγκεκριμένη ηλικία ξεκίνησε να ηγείται της χορωδίας του τοπικού ναού παίζοντας εκκλησιαστικό όργανο ενώ ταυτόχρονα ίδρυσε την πρώτη του σχολική μπάντα με την οποία έπαιζε διασκευές για τις αμερικάνικες βάσεις της Μ. Βρετανίας. Δύο χρόνια αργότερα θεωρείται κι επίσημα επαγγελματίας μουσικός καθώς ξεκίνησε να παίζει σε pubs και μέσα σε σύντομο χρονικό διάστημα είχε χτίσει ήδη το όνομα του ‘’πιο περιζήτητου μπασίστα’’ και του ‘’πιο διαβασμένου μουσικού’’ της ευρύτερης περιοχής!Αυτό το γεγονός είχε ώς αποτέλεσμα την επόμενη κιόλας χρονιά(1963) να παίξει μπάσο για τους Jet Harris και Tony Meehan επιτυγχάνοντας τρία Νο.1 στα βρετανικά charts. Έναν χρόνο αργότερα και σε ηλικία 18 ετών ξεκινάει την σταδιοδρομία του και ως ενορχηστρωτής στην ορχήστρα του Andrew Loog Oldham και από εκεί και πέρα ανοίγεται ένα τεράστιο πεδίο συνεργασιών με αποκορύφωμα τις ενορχηστρώσεις του για τους Rolling Stones της περιόδου “His Satanic Majesties Request”!

 

 

Εκείνη ακριβώς την περίοδο ο John Paul Jones ανάμεσα στις άλλες συνεργασίες του ως session μουσικός δούλεψε και με τον Jeff Beck και τους Yardbirds. Μια συνεργασία η οποία έπαιξε καταλυτικό ρόλο στην μουσική του διαδρομή και στην ζωή του καθώς ο Jeff Beck υπήρξε ο συνδετικός κρίκος για την γνωριμία του Jones με έναν νεαρό session κιθαρίστα ο οποίος ήταν πετσί και κόκκαλο και ονομαζόταν Jimmy Page! Tα χρόνια που ακολούθησαν ο αν(ήσυχος) μπασίστας συνεχίζει ακάθεκτος την πορεία του ως ενορχηστρωτής ενορχηστρώνοντας έργα των Marc Bolan(T Rex),Cliff Richard,Cat Stevens,Dusty Springfield και Madeline Bell ώσπου φτάνουμε αισίως στο 1968 όπου μετά από τις ασφυκτικές πιέσεις και την συνεχόμενη προτροπή του Jimmy Page συναποφασίζει μαζί του την ίδρυση των Led Zeppelin!

 

 

Ο ρόλος του στο συγκρότημα ήταν ζωτικής σημασίας καθώς μαζί με τον John Bohnam έχτισε ίσως το κορυφαίο rhythm section στην ιστορία της ηλεκτροδοτούμενης μουσικής και οι μπασογραμμές του συντέλεσαν καίρια στο απόφθεγμα της εποχής που έλεγε πως ‘’ουδέποτε τα blues παίχτηκαν τόσο βαριά’’…

 

 

Ως φιλήσυχος άνθρωπος με αυξημένο δείκτη ταπεινότητας έπασχε από δημόσιες σχέσεις με αποτέλεσμα από την μία να ζήσει στην σκιά των Page/Plant από την άλλη όμως ήταν αυτός που κρατούσε τις ισορροπίες όταν οι εκρήξεις των υπολοίπων έδιναν και έπαιρναν… Εξ αρχής και συνειδητά στα μετόπισθεν της μπάντας δημιούργησε όλο το backround του ήχου της (η ατμόσφαιρα των Zeps είναι δικιά του υπόθεση, τελεία και παύλα!) ενορχηστρώνοντας, συνθέτοντας, παίζοντας μπάσο και πλήκτρα και προσφέροντας τα μέγιστα όσο αφορά την παραγωγή! Εννέα albums δισκογραφία, ένα κινηματογραφικό film και εικοσιέξη περιοδείες υπήρξαν η ανυπέρβλητη κληρονομιά των Led Zeppelin που διαλύθηκαν άδοξα λόγω του απρόσμενου θανάτου του John Bonham τα ξημερώματα της 25ης Σέπτεμβρίου του 1980 μετά από κατανάλωση αμέτρητης ποσότητας vodka…

 

 

Μετά την διάλυση του συγκροτήματος ο Jones δεν χάνει καθόλου χρόνο και στήνει αμέσως το πρώτο 24-track ηλεκτρονικό του studio στο Devon. Συγχρόνως διδάσκει στο τοπικό Κολλέγιο Τέχνης το μάθημα της ηλεκτρονικής σύνθεσης. Το 1983 εμφανίζεται στην ταινία ‘’Give my Regards to Broad Street’’ του Paul McCartney ενώ το 1986 βραβεύεται για την μουσική της τηλεοπτικής σειράς του BBC ’’Odysseus’’… Tην περίοδο 1987-88 αναλαμβάνει την παραγωγή του album ‘’Children’’ των The Mission και στα 1990 ενορχηστρώνει τις συνθέσεις των Cinderella για το album ‘’Heartbreak Station’’… H δεκαετία του ‘90 τον βρίσκει εξίσου ενεργό καθώς το 1991 μετακομίζει το studio του στο Bath και το αναβαθμίζει σε 32-track ψηφιακό. Εκεί συνθέτει την μουσική για την παγκόσμια διαφημιστική καμπάνια της Mercedes Benz ενώ το 1992 συμμετέχει στο album ‘’Nerve Net’’ του Brian Eno, στο ‘’Us’’ του Peter Gabriel και ενορχηστρώνει το ‘’Automatic for the people’’ των REM.Την επόμενη χρονιά οι Raging Slab τον καλούν να επενδύσει με έγχορδα το ομότιτλο άλμπουμ τους και ο Lenny Kravitz τον έχει ώς επίτιμο καλεσμένο στην ζωντανή του εμφάνιση στα MTV Awards. Ταυτόχρονα συνθέτει τα soundtracks για τις ταινίες ‘’Scream for Help’’, ’’Risk’’ και ‘’The Secret Adventures of Tom Thumb’’.

 

 

Σε αυτό το το χρονικό σημείο ξεκινά ίσως η πιο απόκοσμη συνεργασία που είχε ποτέ ο Mr. Jones καθώς αρχίζει να δουλεύει με την ‘’εξωγήινη’’ και συνάμα χαρισματική Diamanda Galas. Μια μακροχρόνια συνεργασία η οποία τους οδήγησε σε παγκόσμια περιοδεία και το 1999 ο ασταμάτητος Jones κυκλοφορεί το πρώτο του προσωπικό άλμπουμ με τον τίτλο ‘’Zooma’’. Aξίζει να μείνουμε λίγο στον συγκεκριμένο δίσκο καθώς κινείται στα όρια της πειραματικής μουσικής με πολλά στοιχεία drum ‘n’ bass και αποτελεί ‘’σχολείο-σεμινάριο’’ για κάθε μπασίστα καθώς σε αυτό το άλμπουμ ο γερόλυκος παίζει απίστευτο μπάσο! Ο πειραματισμός όμως δεν τελειώνει εδώ καθώς οι αρχές του επόμενου αιώνα τον βρίσκουν να υπογράφει στην Discipline Records του εξίσου ‘’φευγάτου’’ Robert Fripp και να συνυπογράφει ως headliner την αμερικάνικη περιοδεία των King Crimson στην οποία εμφανίζονται μαζί τους περιστασιακά και οι Tool.

 

 

To 2003 κυκλοφόρησε η δεύτερη προσωπική του δουλειά με τίτλο ‘’The Thunderthief’’ ενώ το 2004 συμμετείχε στο ‘’In Your Honor’’ των Foo Fighters.Τρία χρόνια αργότερα όμως ξαναβρέθηκε με την ‘’παλιοπαρέα’’ και πραγματοποίησαν το όνειρο εκατομμυρίων οπαδών! Στις 11 Δεκεμβρίου του 2007 στην O2 Arena του Λονδίνου έλαβε χώρα το πιο πολυπόθητο reunion στην ιστορία της σύγχρονης μουσικής καθώς οι Zeps ξαναέπαιξαν μαζί μετά από δεκαεννιά χρόνια έχοντας στην θέση του drummer τον Jason Bonham.
Από εκείνο το χρονικό σημείο μέχρι και σήμερα δραστηριοποιείται με τους Them Crooked Vultures τζαμάρει με όποιον μουσικό γουστάρει και φυσικά συνεχίζει την ένδοξη σταδιοδρομία του ως παραγωγός και ενορχηστρωτής μα και ως συνθέτης κινηματογραφικής μουσικής.

 

 

Όσοι νομίζετε ότι ο κατάλογος με τις συμμετοχές και τα κατορθώματα του τελειώνει σε αυτά που αναφέραμε παραπάνω πάρτε βαθιά ανάσα καθώς τώρα θα απαριθμήσουμε και τους υπόλοιπους με τους οποίους έχει συνεργαστεί… Λοιπόν… Έχουμε και λέμε…Tom Jones (ο σημαντικότερος εν ζωή ερμηνευτής αυτή την στιγμή στον πλανήτη), Combo, Everly Brothers, Etta James, Marianne Faithfull, George Martin, Burt Bacharach, Sammy Davis, Paul Anka, Del Shannon, Engelbert Humperdink, Walker Brothers, Memphis Slim, Champion Jack Dupree, Pearl Bailey, Dinah Washington, Kathy Kirby, Jay And The Americans, Paul And Barry Ryan, The Supremes, Bo Diddley, Detroit Spinners, Shirley Bassey, Sue And Sunny, New York Dolls…

 

 

Έχοντας πράξει τα ΠΑΝΤΑ με τους ΠΑΝΤΕΣ και έχοντας επηρεάσει τους ΠΑΝΤΕΣ και τα ΠΑΝΤΑ τι να περιμένουμε από αυτόν στο μέλλον; Καταρχήν να είναι καλά στην υγεία του και να του ευχηθούμε χρόνια πολλά έστω και καθυστερημένα καθώς πριν από λίγες μέρες είχε γενέθλια! Κατά δεύτερον να συνεχίσει να είναι ιδιόμορφος, αυθεντικός και παραγωγικός! Κατά τρίτον να συνεχίσει να αποτελεί πρότυπο προς μίμηση για κάθε μουσικό και κατά τέταρτον με αφορμή την επερχόμενη εμφάνιση του στο Big Ears Festival στην Αμερική τον ερχόμενο Μάρτιο να σταυρώσουμε τα δάχτυλα μας μπας και περάσει και από τα μέρη μας… Στο συγκεκριμένο φεστιβάλ συμμετέχει και ένας δικός μας ιδιαίτερος καλλιτέχνης που ονομάζεται Σωκράτης Σινόπουλος οπότε ίσως μπορέσει να τον πείσει…

Άλλωστε ο Mr. Jones μας έχει αποδείξει περίτρανα πως είναι απρόβλεπτος και πως είναι ΙΚΑΝΟΣ ΓΙΑ ΟΛΑ!

Smoked chicken is like liver. You either love it or hate it. In the South, you can start a fight by voicing a preference for either smoked chicken or fried chicken. For me, it's all about the skin. Fried chicken is worthless unless it crunches. Smoked chicken, Georgia style, is big, bold, and assertive, but the skin, although it is packed with flavor, is not crispy. The only way to tell which side of the chicken wire fence you're on is to try it. Fortunately, it's easy to make. This method will produce a delicate, moist bird if you don't overcook it, so there is no need to even consider brining it.

About the Memphis Dust. In Georgia this could get me thrown in the Okefenokee Swamp, but you could remove the skin and dust it with my Simon & Garfunkel Rub instead of Memphis Dust. Savory and low fat. OK, I'll shut up now.

Method

1) An hour or three before cooking, split the chicken in half by cutting it with heavy shears. Dig out all that brown goop nestled along the spine (kidneys). In fact, I usually just remove the spine, rinse out the kidneys, toss the spine in a bag, and save it for making stock. Sprinkle the chicken with salt. This is called dry brining. The salt migrates into the meat, and helps season it and hold onto moisture. Wet the chicken and dust both sides thoroughly with the spice mix but remember, spices don't penetrate far (I discuss this in my article on marinades).

2) Preheat your smoker to 325°F. If you are using a grill, set it up for 2-zone or indirect cooking. At 325°F, you can render more fat and crisp the skin a bit.

3) Put the meat in the smoker or on the indirect side of the grill. Add less wood than you normally do. Resist the urge to add more. After you've tasted it you can decide if you want to use more wood next cook. But chicken doesn't need much smoke. Cook for about 1.5 to 2 hours or until the temp in the thickest part of the meat without touching bone is 165°F.

Crisp the skin. When you're done smoking, but the meat is slightly undercooked, say 150°F, move it to the direct heat side of a hot grill, skin side down. Or put it under your kitchen broiler skin side up. That should do it. Take it up to 160°F.

Make pulled chicken. When the meat is done, you can pull the meat off the bones and rip it to shreds, plop it on a bun, and crown it with a dollop of sauce. Voila: Pulled Chicken! Or when the bird is raw, remove the skin. Smoke it alongside the meat. It will get crisp, like cracklins. Then pull the meat off the bone, put it on a bun, just a little sauce, sprinkle the crackins on top, and serve.

Smoked pork ribs take amazingly well to the flavors of soy sauce, ginger, and five-spice powder.

As a seasoned BBQ cook living in Memphis, I am expected to produce nothing but the best when it comes to smoked pork ribs. The challenge for me, however, is finding a way to set my ribs apart from those available at countless BBQ joints throughout the city.

When it came time to host our kids’ friends for an end-of-school-year pool party, I set out to create a rib recipe that was traditionally “southern” in technique but with flavors less common to this part of the world.

Smoked spare ribs with Chinese seasonings fit the bill. The flavor base comes from a dry rub of paprika mixed with five spice powder, including cinnamon, cloves, anise, fennel and Szechuan pepper (see our five spice powder recipe here or use store-bought). The ribs are smoked low and slow until moist and tender then glazed with sticky sweet soy and ginger BBQ sauce. When I set out these ribs, the kids devoured them as soon as they hit the serving platter!

About the salt: Remember, kosher salt is half the concentration of table salt so if you use table salt, use half as much. Click here to read more about salt and how it works.

About the mayonnaise: The use of mayonnaise is completely optional but is something that I have done for years. As with the more popular yellow mustard, the mayonnaise serves as a binding agent for the dry rub without drastically altering the flavor of the finished meat. Unlike mustard, mayonnaise is high in fat, which benefits the ribs).

Method

1) Prep. To create the five-spice dry rub, combine the sweet paprika and five spice powder in a small bowl and blend well (now it's a six-spice rub!).

2) Remove the membrane from the slab of ribs (read more on removing the membrane here).

3) Season the slab of ribs with Kosher salt. If you can, give the salt 1 to 2 hours to be absorbed. The process of salting in advance is called dry brining. The rule of thumb is 1/2 teaspoon of kosher salt per pound of meat, but ribs consist of only about 50% meat, so use about 1/4 teaspoon per pound. You can simply eyeball it by sprinkling on the same amount of salt you would sprinkle on the ribs if they were served to you unseasoned. 

4) Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of lit charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F and add three to four chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F on the indirect side.

5) Once the smoker or grill is ready, brush both sides of ribs with mayonnaise and lightly season with the five-spice dry rub.

6) Cook. Place the slab of ribs meat side up on the main cooking grate as far away from the heat source as possible. Cover the smoker or grill. Allow the ribs to smoke until the meat just begins to shrink back from the ends of the bones, about 3 1/2 hours.

7) Lay out two double layers of heavy-duty aluminum foil approximately eight inches longer than the ribs. Lay the slab of ribs on the foil meat side down. Fold up the sides of the foil to create a boat, pour in the apple juice, and loosely seal the foil.

8) Place the foiled ribs sealed side up on the smoker or grill and cook until the meat shrinks back from the ends of the bones by 1/4 to 1/2 inch, about 1 hour.

9) As the ribs smoke, make the soy ginger BBQ sauce by combining the ketchup, honey, soy sauce, rice vinegar, brown sugar, ginger, garlic powder, and sesame oil in a small saucepan. Simmer the sauce over medium-high heat while stirring frequently until thickened, about 10 minutes.

10) Remove the ribs from the smoker or grill and cautiously open the foil packet to allow the steam to escape. Gently remove the ribs from the foil and set them back on the smoker or grill meat side up. Cover the smoker or grill and allow the ribs to cook until tender but not falling off the bone, about 20 minutes. We prefer to use the "bend test." Use tongs to pick up one end of the slab of ribs, then bend them slightly. If they are ready, the slab will bow until the meat starts to crack on the surface.

11) When they are ready, brush sauce on both sides of the ribs and turn them meat side up on the smoker or grill. Cover the smoker or grill and cook until the sauce sets and becomes tacky, 3 to 4 minutes.

12) Serve. Remove the ribs from the smoker or grill, slice, and serve.

Coit Tower
has taken on a royal blue hue in the last few days with the Golden State Warriors leading in Pacific Division championships against the Memphis Grizzlies of the 2015 NBA playoffs. Yet whether they hang on to their lead and advance and the blue lighting remains, there's still a 80-year-old masterpiece consisting of 27 pieces depicting a San Francisco of days gone by.  

If an excuse is needed to visit touristy Telegraph Hill, don't make it about the view (we've seen better) but for the Coit Tower Murals. 


          

Murder Mystery | Who Poisoned Boozin' Bob

Our top service representative, Boozin’ Bob was found dead yesterday morning outside of his uptown condo. Upon initial investigations, it appears Boozin’ Bob was poisoned. After 36 hours and no leads, investigations are at a standstill and it’s now up to you to help figure out the mystery! What we currently know about the situation, is that Boozin’ Bob had recently invited a few colleagues and alcohol brand owners for a business marketing proposal to his current home state of Michigan. His guest list included:

-Justin Timberlake: Owner of Sauza 901 Tequila, a partner of Sauza Tequila. He had cut his trip home to Memphis short upon hearing of his invititation to the “mitten state”.
-Bethenny Frankel: Owner of Skinny Girl Margaritas. She was conveniently in the state of Michigan looking for some new lakefront real estate on both Lake Michigan and Lake Superior.
-George Clooney: Owner of Casamigos Tequila. Preferring to keep his tequila private, Bob convinced him to appear to hear a pitch on a potential Oscar winning beer pong movie and series pilot.
-Sean Combs: Owner of Ciroc Vodka. With the success of Ciroc once joining the team, Boozin’ Bob was looking to bring him in to join the Boozin’ Gear, Inc corporation to broaden the brand.
-Bruce Willis: Owner of Sobieski. With his experience as a spokesperson, Bob was hoping to get Bruce on board with the next marketing plan.
-Dan Akroyd: Owner of Crystal Head Vodka. He started this brand from the ground up and that same drive was desired by the team at Boozin’ Gear, Inc.

The location of the meetup with everyone was a secret, just as much as the meet itself. A few locations that had been known to hold an event for BoozinGear and usually ensure Bob and everyone who joins him will have a blast! A few possible bars that the meetup was:

-A.J. Bailey’s Bar: 304 Salzburg Ave Bay City, MI. A small local bar known for its bar leagues, mainly darts (both steel and soft)
-Hill’s Bar: 7304 Gratiot Rd Shields, MI. HILLS FOR THRILLS. A small dive bar set for small town entertainment and great service
-MI Slinger’s Bar & Grill: 11791 Farmington Rd Livonia, MI. Full of non-stop excitement and entertainment daily
-Bay Lanes Tap Alley: 4243 N Euclid Ave Bay City, MI. Attached to the bowling alley with over a dozen craft beer options
-Hennessey’s Pub & Kitchen: 42012 Hayes Rd Clinton Township, MI. An Irish Pub with vast food selection as well as tvs all around the bar
-Lumber Barons & Stables: 804 E Midland St Bay City, MI. This facility is a brewery, restaurant, bar, banquet facility and most notably, stables (like stables for your horses, but quaint cute rooms to enjoy your company)

Lastly, we need to find out which drink was slipped the poison. Boozin’ Bob has been known to drink whatever his companions are indulging in (unless it’s Tequila~). These are some of the adult beverages that potentially brought about his horrific death:
